Apple Pie Energy Bites

I don’t know about your kids, but mine are constantly looking for something to snack on. I love to try different protein bite combinations as it gives us all variety, along with being so packed full of nutrients. Another reason I really enjoy making them is that it gives my little one an opportunity to get in the kitchen with me. She can pour in the ingredients and get her hands messy while rolling them into balls. *Super fun for an 8 year old!

I stumbled upon this one recently and made some adjustments! They turned out fantastic. Next time I will add some crushed almonds (didn’t have any on hand).

Apple Pie Energy Bites

~2 1/4 cups of organic rolled oats
~1 large apple, grated or finely chopped
~1/2 tsp each of Cinnamon, Nutmeg, and Ground Ginger
~4 Tbsp Flax seed (I used a combo that has flax and chia seeds)
~4 Tbsp Honey
~8 Tbsp of Cashew butter or any nut butter of choice

Add all the ingredients to a bowl and mix well. Form into balls and chill for an hour before
eating. 

Makes about 18-24 bites

*A tip I like to use for getting all the honey off measuring spoon is to first 
spray the spoon with nonstick spray. It'll all slide right off!

Healthy Chocolate Pudding? Is that even a thing?

So I think it’s safe to say that when it comes to chocolate pudding, we all revert back to 5 year olds and get super excited! Am I right?! Well actually, in all honestly, one of my kids is not a fan of chocolate. I don’t even know how that happened. So as much as I love it, I do not like my kids asking me for pudding and knowing that most of the options out there are full of fake junk and chemicals!

I was so excited then, and a little skeptical, when I heard that you could make a good for you, guilt-free, but still oh so delicious version of pudding! Like one that you could give your kids without cringing. The secret ingredient is……drum roll please…..AVOCADO! Now I can chow down on some guacamole with the best of them but having it in my dessert is not something I ever thought I’d try!

Of course I had to put it to the test and so reluctantly I set about cutting my avocados!! I say reluctantly because #1 if you have bought avocados recently, you know they are expensive which then led to hesitation #2 that no matter how gross this pudding came out, someone was going to eat it, cuz ain’t nobody got time for wasted avocados!

So it’s a GREAT thing then that everyone liked it! It was a total hit with my kids and I made it 2 days in a row….so simple to throw together. I topped ours with some chopped up cacao nibs because we like to be extra.

Chocolate Avocado Pudding
~2 medium, ripe avocados, cut into chunks
~6 Tbsp cacao powder
~6 Tbsp maple syrup or honey
~10 Tbsp non-dairy milk (I used almond milk)

Throw all the ingredients in a blender and start on low working your way 
up to high. Add more milk if necessary. Serve cold and enjoy!
